Is it possible to make custom NPC weapons in a mod_overrides mod?

I know that you can add in helmets into the game by placing a unit_mat into the add.xml and making everything needed point to it, however is it possible to make custom npc weapons without having to make it a mod? I don't want a completely new weapon like a grenade launcher or anything of the sort, i just want to know if its possible to make clones of NPC weapons with different models and stuff.

you can replace their models i think, but idk if you can "add" new ones without code changes
